All About Nigori, the Cloudy Sake
Commonly referred to as "unfiltered" sake, nigori literally means "cloudy," and refers to sake that still contains rice solids that have not fermented. Our guide tells you everything you need to know.
Nigori type sake is cloudy, with some lees remaining. It can range from slightly cloudy to milky white. Fresh notes of pear, apple, and candied plum. The palate features a creamy texture with a light, balanced sweetness and flavors of underripe peach, Greek yogurt, and cedar. While Nigori is often sweet, Big Mountain is drier than most, making it one of the most elegant Nigori Bottlings. It is best chilled, and should be gently shaken to reintegrate the rice sediment before pouring.
